How to Roast Pumpkin Seeds

These tasty, not too unhealthy, snacks are easy to make.

Carving the jack-o-lanterns today? Why not save the seeds for a tasty—and fairly healthy—snack later?

Roasting pumpkin seeds is incredibly easy, with four quick steps:

  1. Separate the pumpkin seeds from the "guts" and rinse the seeds (some recipes call for soaking the seeds in salt water, but we find this leaves the seeds a little soft in the middle)
  2. Coat a roasting or cookie pan and seeds very lightly with olive oil and sprinkle with salt
  3. Spread the seeds evenly on the pan
  4. Cook at 350 degrees until lightly golden (about 15 minutes)

There are tons of things you can add to vary the taste. Try any of these (though not all at once...):

  • Chili or cayenne pepper powder
  • Garlic powder
  • Your favorite herb (we like rosemary)
  • Cinnamon and sugar
  • Pumpkin pie spices
